Morris Salerno, born and raised in Dallas Texas with eight
brothers and sisters, was taught that if you want something you had better work
for it. He always liked to cook and sent off for his first cookbook at the age
of 8. At the age of 16, he moved on his own and began to earn a living. At the
age of 18 he entered the culinary field.
Success
is something Salerno knows about. In the 1970s, he worked in the famous kitchen
at the Fairmont Hotel in Dallas. In the 1980s, at the age of 27, he became one
of many chefs at the prestigious Loews Anatole Hotel in Dallas. Probably best
known for his local restaurants, Salerno said every working chef's dream is to
open their own restaurant. He did, not just one, but two: Salerno Restaurant in
Flower Mound, Texas and Grotto in Highland Village, Texas
While opening his restaurants, Morris found time to be involved in the Epicurean
World Master Chefs Society. Chefs from all around the world compete for the
highest award given to a master chef. The Golden Platter Award is awarded to a
team of 10 master chefs from individual countries. In 1996, Chef Morris Salerno,
the USA team captain, was awarded the Captain's Trophy for an outstanding
performance and dedication to his team, the job and himself. He has been a
competing chef on the USA team since 1992. In 1991, he earned "Dallas Chef of
the Year" by the Texas Chef Association.
If you think all this is impressive, wait until you taste and experience the
finesse of his presentations at Grotto.
